Arabian Chickpea and Eggplant Stew

This recipe was in the paper, but of course I changed it and made it 45 mins rather than several hours. You could also use grilled eggplant (flesh only), 2 grilled poblanos, hot smoked paprika (rather than sweet) and fire roasted canned tomatoes for a more smoky version.

Equipment

  • 1 Large heavy bottomed pot or dutch oven

Ingredients

  • 1 pack Ground Chicken OPTIONAL Try to find a blend, not just breast, which is low fat and NO flavour.
  • 2 Tbl EVOO
  • 4 Chinese or Japanese long eggplants, halved and sliced into 1/2" pieces OR 2 small Italian Eggplants. Asian varieties are easier to cut and cook.
  • 1 med Onion, 1/2" dice White or red onion.
  • 8 cloves Garlic, minced
  • 2 cans Chick Peas (ceci, garbanzos), drained
  • 1 can Diced tomatoes with juice Fire roasted is nice!
  • 1 Tbl Tomato paste
  • 1 Tbl Aleppo pepper sub 1 tsp cayenne and 2 tsp smoked paprika
  • 1 Tbl Cumin
  • 1 tsp Allspice
  • 3/4 Cup Chicken or Vegetable stock more or less to your preference
  • 1/4 Cup Red Wine vinegar sub Sherry vinegar
  • 1-2 Lemons, zest and juice start with one, use two if needed
  • 1 Tbl Sugar IF needed to balance tomatoes, to your taste. Agave may be used, but use much less. TASTE IT.
  • 1/4 Cup Fresh Parsley, chopped use fresh here
  • S/P to taste
  • Fresh mint, chiffonade OPTIONAL
  • Crumbled Feta OPTIONAL, but I highly recommend

Instructions

  • Partially peel the eggplants, then halve longways and slice 1/2" across for half moons. Dice onions and mince garlic. Zest lemons and chop parsley.
  • Arrange eggplant on a baking sheet with EVOO and roast at 400ºF until browned.
  • On medium heat, put EVOO in dutch oven and sweat onions and garlic. Add chicken if using and sauté until browned. Add 1 tsp salt.
  • Add eggplant, chickpeas, tomatoes, tom paste, spices and lemon zest. Turn heat up to med high. Stir for a couple of minutes.
  • Add stock to get the thickness you like. Simmer a couple more minutes.
  • Turn down heat to low and add vinegar and lemon juice. Add sugar if needed to balance the acid. Add parsley. Check S/P to your taste. When stew reaches simmer again, turn off the heat.
  • Serve with a chiffonade of mint and crumbled feta.

Notes

This stew can be as spicy as you like - just add more aleppo pepper. 
I like the vegetarian version as well as the chicken version. Feel free to omit the chicken! 
The trick to this stew is balancing the acid/savoury. You do NOT want to put too much sugar or agave! Just enough to take away the strong acidity of the tomatoes, vinegar and lemon juice. You might not even need it - it depends on the tomatoes you use. 
Do not simmer too long once you've added the lemon juice or it will go bitter on you.

Figs with Goat Cheese

This appetizer is from Anne Burrell with little modification other than the ham. It’s simple, quick and VERY delicious!

Pint of Mission Figs (10 or so)
Chèvre (goat cheese), any flavour. I use Fig flavoured!
Ham or prosciutto (original calls for prosciutto, I use plain deli ham)
Balsamic Vinegar
Olive oil

Cut off the stem of the figs and cut them in half longways. Make a dent in the center of the fig. Sprinkle figs with some balsamic. Put a bit of goat cheese in the dent. Cut ham in strips and wrap around the fig and cheese. Secure with a toothpick. Drizzle with a bit of olive oil. Either grill them until hot or bake them until hot, about 8 minutes. Enjoy!

Latest news from home

They only call me with bad news, the family. My dad called today to tell me that my Granny is on her way out. He sounded pretty shitty himself. The COPD is really bad when the pollution is high like it is now.

This is not a surprise. They stuck her in a home and she’s been losing her mind ever since. It’s taken a coupla years, but she’s finally succumbing to dementia and has been reduced to a raving lunatic. They tell me she rants nothing but curses and “Help Me!!”. It breaks my heart. Again I wonder why we can’t put humans out of their misery like we do our pets. It’s just not right.

After hearing this news, I’m doubly glad I did not choose to go see her a couple of weeks ago. I really do not want to lose my last memories of her at home, chatting with us, having a good day. That is the memory I want and that’s the memory I have. You may think me selfish for this, but I have to differ with you. Going to see her now would not impact her at all, it would only impact me in a negative way. I really don’t see the point in that. If she was lucid, that’s one thing, but she’s not. She hasn’t been for quite a while. So I stand by my decision to remember her as she was rather than as she is now.

Once she’s crossed over I’ll write a long post about my memories of Granny. Until then, it’s the waiting. I look forward to her crossing. It will end this horrible existence for her and she will be happy then. May the goddess bless her soul.

Knoxville Comic and Anime Con

It was an ok con. It’s the first one, so I didn’t have high expectations. It’s small, it’s in an out of the way place, it would be fine as a one day con. We did meet the dude who runs this con – AND he does the Nashville con, too. So we’ll probably go check out the Nashville con to see how it is. And as usual, we met some Atlanta people like we always do when we go to an out of town con. LOL It’s nice to make connections!

On the way back, Nick got popped outside of Chattanooga for going 75 in a 45…work zone. Yah, this one’s gonna hurt! I’m betting it’s $600. The cop wasn’t too dickish and didn’t harass us because we had the wrong insurance card on us. [Cop downgraded the ticket and it only cost about $200 if I recall. -A Dec 2015] I’m just glad it was Nick driving! I REALLY don’t need any more points! I’m sure I’m at the borderline now. The fabricated passing a school bus and running over little black children one and the wreck one should be gone soon. Then I’ll have the last one for “running” a stop sign. I rolled it, ok? Whatever. It was 7 fucking am.

Then after my poor Weasel getting all torqued up from the ticket, a trailer being pulled by a pickup had a tire explode in front of us and he almost ran my car under a Suburban. He, of course, denies this, but he also denies that he tailgates, too, so… (It’s an ongoing argument between us – it’s best to just nod and not take sides!) Needless to say, the Weasel was quite perturbed for the rest of the trip but we did get home in one piece. :)

That’s really all that’s going on. We’re going to a block party on Saturday and then doing Twain’s and Decatur fireworks on Sunday. I hope everyone has a wonderful Fourth!
