Gochujang Roasted Salmon with Panko

I’ve fallen in love with gochujang! It’s the Korean chili paste used in all sorts of Korean dishes. This is a marinade recipe that I use on salmon with a crispy panko topping. You can leave off the panko if you like, but it does give an excellent texture.

Marinade:
(double for 4 servings or larger filets)
1 Tbl gochujang paste (I like the one in the square red container)
1 Tbl soy sauce or ponzu if you have it
1 Tbl Mirin
1 Tbl Doenjang (Korean miso; I like the one in the square green container)
1 tsp lime juice (if using plain soy)

Panko:
2 Tbl panko
.5 tsp ground white pepper
.5 tsp salt
1 tsp lime zest
1 tsp olive oil

2 4oz salmon filets (the ones pictured in marinade are 8oz filets, the finished one is 4oz)
2 lime quarters

Mix up the marinade and cover the salmon. Refrigerate for an hour or two.

Preheat the oven to 425F. Stir together panko ingredients and top the filets with it. The marinade should provide enough adhesion for the panko, which should be at least 1/2 inch thick. Put the leftover marinade with a tsp of water in the microwave for a minute or two – long enough to boil it. Once it’s boiled, you can use it as a sauce. You can also put cream and/or a pat of butter in the marinade for a richer sauce.

Put salmon on a rack over a parchment sheet (or foil) covered baking sheet and roast for about 6 minutes. If you don’t have racks, roast directly on covered sheet pan. The panko should be getting brown at the end of 6 minutes. Once it’s browned, cover salmon lightly with a piece of foil so the panko does not burn. Your total cooking time will be about 15 minutes. Salmon should be around 130F internal temp for medium. Remember that it will continue to cook after you remove it from the heat, so a reading of 120F is good.

Serve with a lime quarter and some of the marinade/sauce drizzled over.

Serve with my Creamy Apple and Fennel Slaw, Confetti Rice or sautéed green beans with sesame oil and lime juice.

Creamy Apple and Fennel Slaw
Yield: about 4 cups
Servings: 6-8
Prep Time: 20 minutes

Dressing:
1/4 cup sour cream
1/4 cup mayonnaise
2 Tbl cream (or half n half)
juice from one small lime plus zest (or half a large one)
1 tsp dijon mustard
2 tbsp apple cider vinegar
2 tsp sugar
1/2 tsp salt
fresh ground pepper, to taste

Salad:
1 fennel bulb (including tops), thinly sliced
1/2 Granny Smith apple, about 2/3 cup, thinly sliced and cut into 1/4″ strips
1 cup shredded Napa cabbage (or any cabbage), thinly sliced
1/4 cup thinly sliced red onion

1. In large bowl, prepare dressing by combining all dressing ingredients. Set aside.
2. Prepare salad by thinly slicing the fennel bulbs, apples (skin on), green cabbage and red onion.  A mandolin is helpful for this. Finely dice the fennel tops and add to salad bowl.
3. Mix well and allow to sit for a few minutes before serving.

St Patty’s and other News

Happy St Patrick’s! Other than wear a little green, I’ve done nothing to celebrate my Irish heritage. I’m even making gochujang salmon w/ asparagus and a fresh fennel and apple salad for dinner. Nothing Irish there! LOL Salmon was on sale for $4.99/lb at Kroger! I couldn’t pass THAT up!

We ordered and received our first lot from liquidation.com. Two good sized boxes with 76 items. We are not impressed with the seller (onlinereturns). Not only did they NOT include the highest priced item, but there were 5 items broken/unsellable and one of those was a $30 outdoor light. Ugh. I talked to liquidation.com today and the CSR told me that while some broken stuff is normal, the seller not including things specifically on the manifest is not normal and we are right to dispute. He also told me to include the broken light in the dispute since it was one of the more expensive items. So I did. We shall see how this gets handled. Until then, we can’t sell anything and my library is full of random merch. We got LOTS of iPhone 6 and 6 Plus cases, several VR goggles for phones, a cute lil Polaroid Cube camera and Inkless Zip printer, a Hello Kitty microphone, a webcam, several headsets, a waterproof mp3 player, a Dragon Naturally Speaking dictation set, a coupla HDMI converter boxes, and gobs of random crap. We are loaning an arcade game to BaconFest 2016! Dad’s Garage Theatre asked Joystick for one and Johnny promptly asked us if we’d like to do it. BUT OF COURSE! We are lending them a Street Fighter II multicade. We deliver it tomorrow – but BaconFest is actually March 26. So we’ll be out and about delivering the game tomorrow afternoon, then hitting L5P to check out Arcadia, the new restaurant upstairs at Cameli’s Pizza. We’ll also have a drink at The Porter to celebrate their making the Best Bar in GA list on MSN.

Then we’ve got to get our tax crap together on Sat for our visit to the accountant on Sunday. Buh. Always fun.

Monday we’ve got eye doctor appointments in Decatur, then we’ll probably have lunch at Twain’s.

Learning Curve

So the earrings I made and subsequently sold to my friend Josie did not stay together. Boo! I used cold weld to attach the wires and that, obviously, did NOT do the trick. It was these:

I clearly did not use enough cold weld. SO, I refunded Josie’s money and will repair them and send ’em back. Nick has some silver solder and he is sure he can fix them. While I like the idea of having the wires attached, that was not the original plan. I’d planned to make them standard dangles, but I forgot to drill the holes in the clay before I fired them. Oops! Live and learn.

I’m also testing out the graphic for crossposts. I can’t understand why it’s fine for TEV but screwy for my site. ? Argh.

Curried Beef Stew

This is a super easy stew with tons of flavour! I made it in a dutch oven, but it would probably work in a slow cooker if you hold out the carrots and sweet potatoes until the last hour.

Curried Beef Stew

1-1.5# stew beef, cleaned of fat and cut into same size pieces, then seasoned with S/P
olive oil
1 can coconut milk
1 med onion, large dice
2 cloves garlic, minced
1 Tbl curry powder
1 Tbl All Purpose red curry paste (OR just double the dry curry)
2 Tbl brown sugar
juice of one lime
3 carrots, large dice
1 med sweet potato, large dice
lime and cilantro garnish

Preheat oven to 350F. In a dutch oven, put a few turns of olive oil in and heat over med hi. When hot, add in stew beef and sauté. Do in batches to get good sear. When beef is done, turn down heat to med low and cook onion and garlic until soft and fragrant. Add beef back in, along with curry powder and paste and brown sugar. Stir until meat is well covered. Then add carrots and sweet potatoes and cook for a couple of minutes. Stir in coconut milk and juice of one lime, put lid on dutch oven and put in oven for about an hour or until meat is soft. Serve with lime wedges and cilantro. This is also good served with rice if you want it to be more hearty.
